banana pancakes with macadamia nut sauce





One of my fondest memories of childhood is waking up to my mom making banana pancakes. Instead of mashed bananas in the mix though, she'd take ripe slices and place them on top of the batter before flipping over the pancake. My favorite thing to do was to cut through the pancake and find the pieces that had fried banana on the bottom. The cheap thrills I had as a kid. And even though it was Bisquick mix, my mom made the best pancakes, hands down. Everything mom makes is tops in my book. Every once in a while I still make my mine the way she did though I think the reason why I make it so infrequently is because I'm waiting for the day when I can see her again and she can cook it for me, just like the old days.
My new-found love is for these banana pancakes with macadamia nut sauce (similar to the popular menu item at Boots & Kimo's in Kailua on Oahu). I made them for Mother's Day. Use ripe bananas as I found the sauce to be subtle and not-too-sweet. You'll get the sweet kick from the bananas in the pancakes. The combination of fluffy pancakes and the creamy, nutty sauce topped with slightly crunchy ground mac nuts is simply onolicious (delicious).
